Honey Never Expires

Have you ever thrown away a jar of honey because you thought it had gone bad? If so, you may have discarded something that could have lasted for thousands of years. Honey is one of the very few foods on Earth that never truly expires.

In excavations of ancient Egyptian tombs, archaeologists have discovered sealed jars of honey that were thousands of years old — and still perfectly edible. Some of these finds date back as far as 5,500 years, yet the honey inside remained in near-perfect condition.

This was not an accident. The ancient Egyptians understood that honey lasted. They placed it in tombs as a provision for the afterlife, knowing it would endure far longer than any other food.

The secret lies in honey's unique chemistry. Three key factors make it nearly impossible for bacteria or mold to survive inside a jar of honey.

First, honey is extremely low in water. Bacteria need moisture to grow and reproduce. Without water, they simply cannot thrive. Honey contains so little water that most microorganisms dry out and die almost immediately upon contact.

Second, honey is highly acidic. Its pH typically falls between 3.2 and 4.5, which is acidic enough to kill most bacteria. Few living organisms can survive in such an acidic environment.

Third, bees add an enzyme called glucose oxidase when producing honey. This enzyme reacts with the honey to produce small amounts of hydrogen peroxide — the same substance used to clean wounds. Hydrogen peroxide is a powerful antimicrobial agent that prevents bacteria from taking hold.

Crystallized honey, which appears solid and grainy, is still perfectly safe and edible — it simply needs gentle warming to return to its liquid state. However, honey should never be given to infants under one year of age. Honey can occasionally contain spores of a bacterium called Clostridium botulinum. Adults can handle this easily, but a baby's immune system is not yet strong enough to do so.

Humans have been eating honey for at least 8,000 years. Ancient cave paintings in Spain depict people harvesting honey from wild beehives. Honey was used as medicine, as currency, and as an offering to the gods across many ancient civilizations including Egypt, Greece, and Rome.

Its extraordinary shelf life made it an ideal food for long journeys and for storing through winter. In a world without refrigerators or preservatives, honey was a rare and precious gift from nature.

Honey is a reminder that nature sometimes produces things far more sophisticated than anything humans have invented. A jar of honey sitting in your kitchen cabinet is essentially unchanged from the honey ancient Egyptians placed in their tombs thousands of years ago. The bees figured out something remarkable — and they did it long before any scientist thought to ask why.
